Segreti (secrets): the vegetables we select: native, precious, unique.
Diano, or better the valley of Vallo di Diano, Salerno: where these vegetables originate.
Handmade: because everything that can be made by hand is made by hand.
The products are always examined and processed by hand to guarantee their quality, better than any machine, and dried without the use of dryers, to keep all their organoleptic and nutritional characteristics intact.
The peppers are cultivated on limited areas of land that allow them to be controlled more effectively and ensure product excellence. They are separated into batches with a specific name that guarantees traceability in each phase of processing, this name is then indicated on the label to tell consumers about the product's journey to their tables.
The peppers used are the only ones to have their very own names:
Sciucillone - Sweet pepper, with a very thin pulp, and high digestibility when consumed fresh. Extremely suitable for drying, its name derives from sciuscelle (carobs in dialect).
Il Serpentino - Spicy pepper. Can be consumed fresh, dry or processed. Its name comes from its resemblance to a small snake.
Sciuscillone and Serpentino are air-dried naturally for at least 50 days, they are then cleaned and their seeds are removed by hand.
Starìci, Porva, Cuòrno, CremadiCrùsco, Serpentìno, LaPiccànte, Fòrte are all names deriving from the local dialect.
