The pasta factory, in the Marche hills, is surrounded by the cultivated fields where Pasta Mancini is born. Le Marche region is dedicated to the cultivation of durum wheat, due to the type of soil and climate, but also thanks to its farming culture. Crop rotation has forever been practiced here and biodiversity promoted.
At Mancini, from the wheat ear to the table, traceability is guaranteed, as is the absence of chemical residues, certified by continuous laboratory analysis. In addition, the artisan processing method emphasizes the characteristics of the raw material.
Each variety cultivated by Mancini has its own character and history, and differs in size, colour, gluten content, protein content, and production potential. Each one's strengths and weaknesses are well-known. They have all been selected on the basis of very high agronomic and qualitative criteria. According to the characteristics of the harvested wheat, the original Mancini Pasta blend may change.
