Saporea was born from an innate passion for vinegar, fruit and aromatic herbs, which it expertly cultivates to make healthy sauces.
Pomegranates, kakis, grapes, chokeberries, raspberries, figs and other varieties are cultivated on approximately 3 hectares of land, free from pesticides and treatments that are harmful to health and the environment.
Therefore, the raw materials used are 0 Km. Saporea wanted to select fruit with marked beneficial properties and began immediately with khaki, pomegranates, kiwi and chokeberries. Right after the fruit processing, which takes place in the laboratory located in an ancient building in lower Verona, where the company is located, the owner Milco Farinazzo extracts the juices, which are immediately left to ferment, while still fresh and pure. Once this first phase is over, the long process of oxidation begins in order to obtain the vinegar using the static method, which clearly distinguishes itself from the forced processes adopted within the industry.
This produces a live, wholesome and healthy product, which maintains the properties of the fruit.
Saporea has drawn on the invaluable collaboration of the Institute of Life Sciences at the University of Modena and Reggio Emilia (UNIMORE), which studied ad hoc acetic bacteria, to begin the development process that has allowed it to obtain its innovative vinegar.
