Balsamic Vinegar of Modena IGP is produced using grapes from seven specific vines: Lambrusco, Sangiovese, Trebbiano, Angla, Ancellotta, Fortana and Montuni. Each grape variety confers the vinegar with different and distinctive aromatic notes.
Aged wine vinegar is skillfully added to these grapes to give just the right balance of sweet and bitterflavours, typical to balsamic vinegar of Modena.
The "Black Seal" represents the careful selection of raw materials carried out by the company and the high concentration of grape must found in the condiment. The result is a rich, dense and harmonious vinegar which imparts a wide spectrum of aromas. The aging of the vinegar in oak barrels completes the production process, to exquisitely balance its organoleptic qualities.
