Traditional Balsamic Vinegar of Reggio Emilia DOP is a prized, exquisite condiment produced from grape must to create a vinegar that is aged in small barrels made of different woods. Grapes from the province of Reggio Emilia are the only ingredient in this product, a luminary of Emilia-Romagna's food culture. It is aged in the attics of old country houses for at least twelve years to yield the ebony-coloured nectar so coveted by the rest of the world. The woods used to make the small barrels are oak, cherry, chestnut, ash, acacia and juniper. Each type of wood releases different notes and aromas to help concoct this elixir with a unique, unequalled bouquet. This is one of Italy's two traditional balsamic vinegars which have been granted the prestigious DOP (Producted Designation of Origin) label. The perfect addition to desserts or starters but also recommended as a divine post-meal digestive.
