Bresaola Della Valtellina IGP Punta d’anca

Bresaola della Valtellina is made from salted and seasoned beef and is eaten raw. The raw material is very carefully selected using the finest beef from European and around the world. The punta d'anca, or top of the hip is the most prized cut taken from the part of the topside which is free from adductor muscle. The raw material is dry-salted and left to rest in brine for a period ranging from 10 to 15 days, before being encased in natural or artificial casing and then dried and seasoned in specific temperature and humidity conditions to determine the slow, gradual drying of the product. During the drying and aging process which lasts for between 4 and 8 weeks, fermentative and natural enzymatic phenomena take place, making the product preservable, digestible and delicious, with the flavour and sensory characteristics that are typical of Bresaola della Valtellina.
