Sophisticated, delicate and natural. Made from meat from the top of the hip of select breed male calves aged about 18 months, this product undergoes a longer than traditional salting process and slow aging to give it very delicate flavour and natural tenderness. When sliced it is a varied red colour with soft shading; a niche product, a speciality for connoisseurs. Mottolini bresaola is created using careful artisan methods following the family tradition. From selecting the finest cuts of beef thigh, to the customary skilful trimming of the meat; from massaging the meat with salt to ensuring a balance of flavours and spices. The processing stages are like genuine rituals taken from ancient recipes passed on over the years with passion and professionalism.
