Sangue di Giuda dell’Oltrepò Pavese DOC Il Traditore 2016

The grapes, harvested manually in the vineyards around the farm, undergo pressing-destemming to remove the stems and prepare the must, rich in skins, for the fermentation process. Alcoholic fermentation is induced using selected active yeasts, and is carried out at a controlled temperature. The alcoholic fermentation is then stopped by cooling to maintain the desired sugar residue to give sweetness to the wine. The must is then pressed to separate the solid parts from the must-wine. The must is clarified in steel tanks at low temperatures. The wine is then put into an autoclave for second fermentation, induced by selected yeasts, to give a sparkling natural tone to the wine. Finally the wine is filtered, stablised and bottled.
