The Biolevante oil mills have been producing quality extra virgin olive oil since 1902. In fact, more than a century ago, the Cassette family started milling olives in Andria in Apulia, where the magnificent Castel del Monte stands tall. Their oil immediately caught consumers' attention for its excellent, balanced taste, for its fragrance of aromas, for its harmony of flavours, for its high digestibility and for its extraordinary lightness. Since then, Biolevante has pressed on, in full respect of the ancient traditions of its oil mill masters combined with the most recent technologies, and continues to receive unconditional appreciation from the most refined palates both in Italy and abroad. Surrounded by centuries-old olive groves in a land particularly suited to olive growing, the Biolevante oil mills are today equipped with modern systems able to ensure procedures that guarantee absolute quality standards and maximum hygiene. The organisational structure is extremely flexible, and marketing strategies have been devised bearing in mind the centuries-old culture linked to the cultivation and production of oil. Biolevante is equipped with the latest generation electronically controlled continuous cycle systems. However, it maintains the Carrara granite mills for pressing the olives, in a conscious synthesis between tradition and modernity. Alongside the sorters, the leaf removers, the three-mill troughs, the kneaders, and the decanters, there is always, however, the skilled hands of man and the experience of the oil masters, always ready to enforce tradition. The oil obtained from the first olive pressing, left to decant naturally in stainless steel containers, is sent to the packaging lines where the automatic bottling machines fill and seal the glass bottles, PET bottles and cans, after a powerful jet of air has removed any impurities from inside the containers. The bottled and labeled oil is then packed in cartons or in blisters and laid on pallets to be transported to warehouses away from light, in a cool, dry place.
