The selected dried chestnuts are stone-ground in a traditional mill, which is still fed by the water from the Mugello mountain streams. The milling phase is also very precise, carried out with a slow rotation of the millstone, which prevents the over-heating of the flour grains, preserving their fragrance. Once called "grandparent's sweets" or "treats" to keep children from crying, they embellish soups with their intense flavour, either alone or with the addition of pulses and vegetables. The production of dried marron chestnuts follows a millennial method of drying. The freshly picked chestnuts are deposited on a “cannicciaia” (perforated platform) inside a “metato” or “seccatoio”, a traditional usually dry-wall stone structure. A low chestnut wood fire is lit in the compartment below, which stays on for about six weeks. Once dried, the chestnuts are removed from the “cannicciaia” and beaten to separate the fruit from the shell. They are then selected one by one through careful manual sorting, the only way to really guarantee high quality in the finished product.
