Marron chestnut flour is a sweet, round and velvety, making it excellent for confectionery and baking. For centuries it has been used throughout the year, even in savoury dishes (polenta, gnocchi, pasta).

Highly nutritious and energizing, it has fed many generations of people. As it is gluten-free, it offers the best cohesion when mixed with wheat flour. Marron chestnut flour is rich in carbohydrates and minerals. It has high nutritional value amino acids. Low, "healthy" fat content, largely unsaturated. The fiber content, which is important for a correct diet, is ten times higher than that of wheat flours, and offers polyphenols and antioxidants in quantities comparable to extra virgin olive oil. The production of marron chestnut flour and dried marron chestnuts follows a millennial method of drying. The freshly picked chestnuts are deposited on a “cannicciaia” (perforated platform) inside a “metato” or “seccatoio”, a traditional usually dry-wall stone structure. A low chestnut wood fire is lit in the compartment below, which stays on for about six weeks. Once dried, the chestnuts are removed from the “cannicciaia” and beaten to separate the fruit from the shell. They are then selected one by one through careful manual sorting, the only way to really guarantee high quality in the finished product.
