Tuscany is one of the few Italian regions renowned for its saffron production. This refined product has its roots in Tuscany's past, where it has contributed to the region's richness and history since medieval times. Used in the past above all to create the "gold" colour of fabrics and paintings, it was also used in the kitchen. It continues to be worked completely by hand, from the laying of the bulb in the summer to harvesting in October and cleaning and drying operations. Saffron, sold in stigmas and not in powder form, contains all the preciousness of the patient manual work involved and of the earth's generosity. The social cooperative Il Sicomoro enjoyed its first season in 2016. A group of people betting on the future, working hard in the present, discovering and learning the exertions and riches of the farming life day after day. There are close ties with the voluntary association Insieme Verso Nuovi Orizzonti ONLUS, which takes in and helps disadvantaged people or people in temporary difficulty, who rediscover the beauty of life working in contact with nature. They return to society through a training course that also gives them the possibility of starting up a job career.
