The elderberries used for jam grow in the wild in the woods of the Sibillini Mountains, and are harvested from August to the end of September. The virtues of this fruit are less well known but very powerful, and it has many uses in the kitchen. Rich in vitamins A and C, this fruit has purifying, diuretic and laxative properties. In addition to breakfast and snack time and in combination with white yoghurt, it is excellent for making tarts.
