Bottled cocktails are the new product category in the mixing market.
After the American bar combined techniques to achieve quality results quickly, Mixology, which transports knowledge from the kitchen to the bar, has now entered the era of aged cocktails: the pre-batched cocktail.
And The Key project is part of this new expressive formula.
Keynco was founded in 2016 and works in the food service industry both in bottled cocktail production, with the Key Cocktail project, and catering.
The idea was to take one of the arts that Italy is famous for worldwide, the art of mixing, and combine it with another Italian specialty: the art of wine.
That is why the cocktails are aged in vats, glass containers or French oak casks. Each blend needs its own refining time to find the perfect balance, smoothness and elegance. Time is the true master here. The waiting time (a fundamental part of the winemaking process) allows the ingredients to interact with each other, creating delicate synergies. So that even the most complex cocktails are soft. Using time, it has been possible to remedy the procedures carried out in a typical bar that stress the molecules (just think of how the molecules are broken in a shaker through the thermal shock and the movement of the liquid from side to side to get them to combine once they come together again). And here we should take a step back in time and remember how the bartender profession was born. In the 1930s, during alcohol prohibition in the United States, distilled spirits were often made in baths at home or in makeshift spaces. They were, generally, undrinkable. This is where the figure of the barman came into play: a person who made the undrinkable drinkable using a variety of ingredients, most importantly: dilution in water. And here lies another fundamental difference between regular cocktails and The Key cocktails.
None of The Key cocktails have been diluted in water. The softness of the blends does of course depend on quality raw materials but also on knowledge and the most important ally of all: time.
The focus is on choosing the highest quality raw materials: grown, picked and handled with care and ethics. We started from the earth looking for spices and herbs. And once again herein lies a further difference that sets us apart from the others, be they express or bottled cocktails. We have chosen products from the earth, which are often wild, and created infusions, flavours and smells. Each spice has its own infusion time, each cocktail its own ageing time.
The making process is completely artisanal and monitored closely throughout the process of creation. Keynco loves to define itself, in all its forms, as a company of artisan products made with care and passion.
