Bitto DOP Cheese

Bitto is made from whole cow's milk fresh from the cow with the addition of no more than 10% goat's milk. The cows which provide the milk feed predominantly on grass from the mountain pastures in the production area. The curds are cooked at a temperature between 48° and 52°C. The ageing process lasts at least seventy days and begins in the alpine dairy farm. Bitto is cylindrical in shape and regular with flat surfaces between 30 and 50 cm in diameter; the sides are concave with sharp ridges 8-10cm high; the weight varies from 8 to 25 kg. The colour of the cheese ranges from white to straw yellow and it is characterized by a compact structure with small holes. The ancient processing technique dates back to the Celts, along with the name Bitto or 'Bitu' which means everlasting. Production takes place during the summer mountain grazing period from 1 June to 30 September. Bitto has a sweet, delicate flavour reminiscent of the aromas of the mountain pastures; the flavour intensifies throughout the ageing period, which can extend for up to ten years to become one of the most sought-after delicacies in the world of cheeses, perfect to enjoy with a special glass of red DOCG wine from Valtellina. Because of the artisanal nature of the product, the actual weight may differ slightly from the amount indicated (either exceeding or falling short of the specified weight).
