From our parents Antonio and Luigia to us, their daughters, Del Curto's family has specialized in maturing cheeses since 1969. The company is located in the foothills of Valchiavenna, Sondrio province, surrounded by mountain peaks between the Spluga and Bregaglia valleys and excellent mountain pastures for natural grazing and exceptionally pure air.
Maturation is an essential stage in cheese processing, and plays a decisive role in enhancing the qualities of the cheese.
Formaggi Del Curto constantly seeks out and selects products from small and medium-sized producers in the local area and works with dairies at the national level to create products which are characterized by the final phase of production, De'C maturing.
"Crotti" cellars and store rooms are – in line with ancient tradition – built in dry stone walling, which allows constant oxygenation without the need for refrigeration. The microflora that develops naturally on the rind of the cheese and in the air allows the cheese to absorb aroma and flavour, obtaining a traditional product with a distinctive De'c profile.
Over the years, Del Curto has supplemented traditional practices with modern business logistics, equipment and machinery that facilitate the entire maturation process.
Since 2005 the company is also registered for the Consorzio Tutela Valtellina Casera e Bitto (CTCB).
