Bonati Parmigiano Reggiano is produced exclusively from the milk of the farm's own cows that are fed on hay from the farm's own fields. In fact, the farm boasts a complete cycle; from food for the animals, to the milk they produce, to making the cheese, all the way through to the sale of products. Every detail of the process is cared for and managed directly by the farm itself. This makes for a truly high quality product, that's scrupulously and expertly monitored down to the smallest detail to ensure complete traceability. The cows mostly eat hay from ancient meadows, which contain herbs and plants that, today, are unknown and impossible to find in more recently-planted meadows. The particular richness of this hay gives the milk and subsequently the cheeses unique flavours.The rest of the feed consists of a mix of cereals, corn, barley and soy. The entire production cycle is strictly artisanal. Awarded 8 first prizes, one of which an absolute first as the best Parmigiano Reggiano.
