Bonarda dell’Oltrepò Pavese DOC frizzante Ăchillius 2016

The grapes, harvested manually in the vineyards around the farm, undergo a softpressing-destemming to remove the stems and prepare the must, rich in skins, for the fermentation process. Alcoholic fermentation is induced by the use of selected active yeasts, and is carried out at controlled temperature. The maceration of the must with the skins has a variable duration depending on the vintage. The solid parts are then separated from the must via pressing. To the must-wine are added noble tannins to accentuate its structure and finesse. The wine is clarified in low-temperature steel tanks. The wine is then put into an autoclave for the second fermentation, induced by selected yeasts, giving it a "natural sparkling" tone. Finally the wine is filtered, stabilised and bottled.
