This is Valtellina's rarest and most unusual wine. It is obtained after the long drying of Nebbiolo grapes - of the "Chiavennasca" variety - that are left on the "mantavole" frames in the attic until the end of January and, in some years, even until the beginning of March. The dry winter cold causes the grapes to lose between 30% and 40% in weight, concentrating aromas, flavours, noble tannins and sugars. It is a dry red wine, full bodied, substantial and warm. Aged for 18 months in oak barrels, it is able to reach levels of great excellence over time.
Elegant, harmonious and fascinating with 4-5 years of ageing, this precious wine becomes superlative after 10-15 years in the bottle.
