Since the harvest of 2013, the company's first vintage production, the company has always maintained the same method of production and selection of grapes, in fact it has made some improvements; before harvesting the grapes in Condrò and Castanea, respectively for the production of Faro and Mamertino di Milazzo red wines, 1,000 kg of grapes are harvested, which are aesthetically healthier and riper, and brought in for processing. They are immediately vinified at a low temperature, the crushed wine is then kept in contact with the peel for 600 hours (24 days) to extrapolate the substances that will give the wine structure and body. Aging lasts for about 600 days (1 and a half years) and 600 numbered bottles are produced.
