The grapes, thinned during the summer to favor the ripening of the best grapes, are crushed and fermented in steel vats. The various varieties are vinified separately and kept at a fermentation temperature of between 26°C and 28°C, depending on the type. Maceration on the skins lasts for at least 10 days, with 2 or 3 daily "remontages" of the fermenting mass. The product is aged in steel tanks for at least 6 months.
