Sforzato di Valtellina 2011 DOCG

Sforzato di Valtellina is a wine made from carefully selected and harvested grapes: Nebbiolo (95%) and other native local varieties (5% – Pignola, Rossola and Brugnola). After period of appassimento lasting at least two months, the grapes are vinified in the traditional way to produce a wine that's powerful and structured, yet extremely sophisticated. The grapes are harvested in early October in crates of about 4kg and undergo natural drying in a well-ventilated store room until early January, when they are taken to the winery for pressing and destemming. Fermentation takes place in a stainless steel tank, with the must remaining on the skins for twenty days, during which it undergoes three cycles of delestage to facilitate extraction of the colour and aromatic components of the skins, and also to provide enough oxygenation to develop the action of the yeasts, which are forced to work in extreme conditions of temperature, sugar levels and ultimately alcohol content. After racking, fermentation continues until the sugars are completely exhausted; this is immediately followed by malolactic fermentation. The wine is then aged for more than twenty-four months in medium-capacity oak casks. The ageing process is completed with a further five months in the bottle. Le Strie is a small wine producer which cultivates approximately one hectare of vineyards and produces a very limited number of bottles: currently around 7500 per year. Our red wines, made from Nebbiolo grapes, are traditional products with a strong bond to their region of origin: Valtellina.
