Carnaroli is one of the most esteemed superfine rices, and is renowned for its elongated grain that stays firm during cooking.
Many consider it to be the king of rices. Risotto is the dish in which it is best expressed thanks to its high amylose content, which makes it substantial and creamy, while maintaining a high absorption capacity.
The cultivation of the Carnaroli variety has almost been abandoned, due to the length of its growth cycle, susceptibility to the cold and height of the plant. These facts have convinced many growers to switch to "similar" rice crops (Carinse, Karnak, Poseidon, etc.), that are simpler to grow and, by law, can be sold with the name Carnaroli on the label. The similarity however relates to the appearance of the grain and not its performance in the kitchen. It is therefore easy to find big differences between rices sold under the words Carnaroli Rice on the label.
Cascina Gilardona has decided to cultivate the "real" Carnaroli for the great qualities that this rice brings to the table. Naturally gluten-free, it is grown in Italy, and the firm guarantees full traceability to check its origin.
