The whole grain quality of unsifted stone-ground spelt give this spelt pasta its unique balance of flavour which can be fully appreciated by draining the cooked pasta when it is very "al dente". This spelt pasta, dried at a low temperature, has unique properties when cooked as the gluten in spelt is different to that in durum wheat, which is why spelt can be enjoyed by those who suffer from minor gluten intolerance. We recommend cooking the pasta in plenty of water, draining it before it is "al dente" and using a wide bowl or pan to add the sauce. The ideal sauce, given the nutritional characteristics of the pasta, is a light, uncooked sauce, like 'pesto alla genovese'. You can add cubes of potato to the cooking water and drain them together with the pasta, keeping a cup of the cooking water to dilute the pasta and provide the perfect amount of moisture for the pasta.
