The purée is obtained from local tomatoes, picked when ripe and processed within 24/48 hours of harvesting. The method consists of a quick blanching, blending and finally vacuum concentration at a temperature of between 28 and 40°C. The result is an excellent purée, with an intense taste and colour, similar to that made by our grandmothers.
