Bisciola is the most famous and delicious Valtellina cake: round or long and enriched with dried fruit, butter, eggs and honey, extremely tasty and filling. It's a sweet with a long tradition, passed down over two centuries and typical in autumn and at Christmas. The ingredients are carefully selected and the dough uses natural yeast and takes a total of thirty-six hours to prepare. This yields an easily digestible product considering the rich ingredients, partly thanks to the manual kneading, which retains the dough's natural elasticity. ​Bisciola should be served thinly sliced, accompanied by warm zabaione or, better still, a fine glass of Valtellina Sforzato wine.
