Ma'kaira is pasta made from durum wheat flour with the addition of barley flour to improve its nutritional qualities. The presence of barley's characterstic beta-glucans helps to keep cholesterol levels under control. Barley grains also provide important fat compounds which contain tocopherols and tocotrienols whose molecules are structurally tied to vitamin E. These antioxidant molecules compete with free radicals (in the case of tocopherols) or, more markedly, contain cholesterol-lowering agents (tocotrienols) that can help combat conditions such as arteriosclerosis.
