Oltrepò Pavese (Classic Method) Pinot Nero DOCG Brut 137 2012

In the last ten days of August the grapes are harvested by hand and quickly transported to the wine cellar in crates, which are emptied directly into the pneumatic press. The obtained must is clarified by being poured off and brought to a temperature of 15°C to start the alcoholic fermentation, which will be completed in about 10 days. After subsequent pourings, at the end of the wint perioder, the wine is prepared for bottling and subsequent re-fermentation in the bottle. At this point, with the Classic Method the wine rests for at least 36 months in a bottle, at a temperature of 12°C and finally, by means of remuage and dégorgement it is clarified and prepared for the market.
