The grapes are subjected to a very soft pressing, with very low yields, of about 50%, to extract only the best must, that is the "first-pressing must". The sparkling base remains in steel tanks, on the fine lees, for a few months, before undergoing a slow and delicate fermentation in the autoclave, using the Martinotti method. The wine remains on the lies in an autoclave, for at least 6 months, before bottling.
